Ghee vs Butter: What It Is and How to Cook With It
What ghee is, how it differs from butter and clarified butter, where the Ayurvedic tradition around it comes from, and how to cook, store and make it.
Ghee is butter taken one step further than clarified butter, and that one step is the whole story: the milk solids are not just removed, they are toasted first. This article explains what that does to the flavor and the smoke point, where the Ayurvedic tradition around ghṛta actually comes from, what the label on an American jar is and is not allowed to tell you, and how to cook with the stuff without wasting it.

Ghee is butter simmered until its water has evaporated and its milk solids have sunk, toasted and been strained out, leaving nearly pure butterfat. That toasting step is what separates it from ordinary clarified butter, where the solids are removed before they colour, and it is why ghee tastes nutty rather than neutral. Practical consequences: a smoke point of roughly 480 °F against about 302 °F for butter, so it holds up to searing and roasting; and shelf stability, because with the water and proteins gone a sealed jar keeps in the pantry — provided you only ever put a clean, dry spoon into it. In the Ayurvedic literature ghrta appears as a carrier for herbal preparations (anupana) and within the rejuvenative rasayana category, and it is the fuel of the diya lamp and the offering in homa rites. What ghee actually is
Butter is roughly 80 percent milkfat, 16 to 18 percent water, and 1 to 2 percent milk solids — the proteins and milk sugars that brown, foam, and eventually burn. Ghee is what is left when you cook the water off and take the solids out.
The difference between ghee and plain clarified butter is a matter of a few minutes over heat. For clarified butter, the butter is melted gently, the foam is skimmed, and the clear golden fat is poured off the milky sediment before it colors. For ghee, the butter keeps simmering. The water boils away, the solids sink and toast at the bottom of the pan, and the fat picks up a nutty, caramelized flavor from them. Only then is it strained.
That is why ghee tastes like something and clarified butter mostly tastes like fat. It is also why ghee keeps: with the water gone and the proteins removed, there is very little left for bacteria to work with. A sealed jar is shelf stable, and an opened jar kept dry does not need the refrigerator.

Smoke points vary with how thoroughly the solids were removed and how fresh the fat is. Treat these as bands, not thresholds — any fat that is smoking has already gone past where you wanted it.
Where the Ayurvedic frame comes from
Ghee is not a wellness invention. The Sanskrit word is ghṛta, and it appears throughout the classical Ayurvedic compendia — the Charaka Samhita and the Sushruta Samhita, texts that took their surviving shape in roughly the first few centuries of the common era, drawing on older material. In those texts ghee is discussed in two roles that are worth keeping straight, because modern marketing collapses them.
The first is anupana — a vehicle. Ghee is fat-soluble, so it was used to carry herbal preparations, which is why the classical formulary is full of medicated ghees (ghṛta preparations) rather than ghee on its own. The second is its place in the category of rasayana, the rejuvenative preparations, and its classification as a sattvic food — clear, settling, suited to contemplative life, as opposed to foods described as heating or dulling.
Ghee also sits at the center of Hindu ritual, and that is a separate thread again: it is the fuel of the diya lamp and the offering poured into the fire in homa and havan rites, including the small daily fire ceremony known as Agnihotra. If you have only ever set a candle on a small altar, that is the same gesture with a different fuel. If you have met ghee only through a supplement aisle, it is worth knowing that for most of its history it was a devotional substance before it was a cooking one.
What the classical texts are is a tradition, carefully recorded and continuously practiced. What they are not is a clinical literature. Ayurvedic writing on agni, digestive fire, is a coherent internal system with its own logic; it does not translate into claims about what a spoonful of ghee will do to your body, and we are not going to pretend otherwise.

What the label can and cannot tell you
Two things worth knowing before you compare jars in the US.
"Butter" is defined by federal law; "ghee" is not. Under 21 U.S.C. § 321a, anything sold as butter has to be at least 80 percent milkfat. Ghee has no separate federal standard of identity, so what is in the jar is governed by ordinary food labeling rules and by the manufacturer's own spec. In practice good ghee is somewhere above 99 percent milkfat, but the number is a claim, not a legal floor.
"Grass-fed" is not federally defined for dairy. USDA's Agricultural Marketing Service withdrew its Grass Fed Marketing Claim Standard in January 2016. What is left is third-party certification — the American Grassfed Association and similar programs — and producer disclosure. A grass-fed claim on a dairy product is a claim by the producer unless a certifier's mark is on the jar. That does not make it false; it makes it worth reading who is standing behind it.
Lactose and casein. Straining removes the milk solids, which is where lactose and casein live, so ghee contains only traces. Some people who are lactose intolerant find they tolerate it. That is a different question from a milk allergy, which is an immune response to milk protein: trace protein can be enough, and ghee is not a safe substitute. If you have a diagnosed milk allergy, this is a conversation for your allergist, not for a jar label.
Cooking with it
Ghee behaves like a high-heat oil that happens to taste like butter, and it is used four ways.
- High-heat searing and roasting. This is where it earns its price. Butter would burn; ghee holds up to a hot cast-iron pan, and root vegetables roasted at 425 °F in a tablespoon of it brown better than in olive oil.
- Tempering spices (tadka or chhonk). The technique at the heart of a great deal of Indian home cooking: heat a spoonful of ghee, drop in whole spices — cumin, mustard seed, curry leaf — and wait for them to pop and darken by a shade, then pour the whole thing over a finished dish. Fat-soluble aromatics come out of the seeds and into the fat in about thirty seconds. Ten seconds later they are burnt, so this is a stand-and-watch job.
- Finishing. A half teaspoon stirred into rice, dal, oatmeal, or a bowl of soup at the very end, off the heat.
- Baking and spreading. Straight swap for melted butter by volume, but you lose the water, which matters in pastry — it will not give you steam-lift in a biscuit or a puff dough. In cookies and quick breads it is fine and adds a toasted note.
The one thing ghee does not do well is anything that depends on butter's water content or on its solids browning in the pan. No beurre noisette; that already happened.
Storing it so it lasts
Keep the jar closed, keep it out of direct sun, and — the only rule that really matters — never put a wet or used spoon into it. Water and crumbs are what spoil ghee. A clean dry spoon and a sealed lid will hold a jar in the pantry for months; the fat may set grainy or smooth depending on temperature, and both are normal. Rancid ghee smells sharp and crayon-like rather than nutty, and there is no rescuing it.
Making it yourself
One pound of unsalted butter yields roughly 12 ounces of ghee, and it takes about twenty-five minutes.
- Melt one pound of unsalted butter in a heavy saucepan over medium-low heat. Do not stir.
- It will foam. Let it. The foam is water leaving, and it will subside on its own after eight to ten minutes.
- Watch the bottom. The solids will sink and go from white to pale tan to a deep toasted gold. When they are amber and the fat above them has gone clear and smells nutty, you are done — usually 18 to 22 minutes total.
- Take it off the heat immediately. Residual heat will keep browning it.
- Strain through a fine mesh sieve lined with cheesecloth into a clean, bone-dry jar. Cool uncovered, then lid it.
Use unsalted butter — salt concentrates as the water leaves and the result is unpleasantly saline. If you want the cultured version, start from cultured butter; you cannot add the tang later.
What we are not claiming
We are not claiming that ghee treats, prevents, or improves any condition. The Ayurvedic literature is a traditional system with its own framework, not a body of clinical evidence, and the modern studies that exist on butterfat are about populations and cardiovascular risk, not about spoonfuls and outcomes.
We are not claiming it is a low-fat or low-calorie food. Ghee is essentially pure fat — around 120 calories a tablespoon, roughly 60 percent of it saturated — and the American Heart Association's standing advice is to limit saturated fat. If you are cooking under medical guidance for cholesterol or heart disease, this is a food to discuss with your clinician rather than a health food to add.
We are not claiming it is safe for a milk allergy. Traces of milk protein remain.
What we will say is that it is an outstanding cooking fat with a high smoke point, a long shelf life, a genuinely old lineage, and a flavor that ordinary butter cannot reach. That is enough of a reason.
