Spices in fat need heat to open up. Melt this in the pan and give it half a minute before anything else goes in — the cinnamon and cardamom lift noticeably, and the black pepper stops being background. Straight from jar to plate, you get maybe half of what is in there.

How do I store it?
Ghee is shelf-stable and does not need refrigeration. Keep the jar sealed, out of direct sun, and always use a dry spoon — water introduced into the jar is the one thing that will spoil it.
