It honors Maria, a Zapotec elder who taught Ora the old method in Oaxaca — roasting the beans over open fire on a clay comal, peeling them by hand, then grinding them with the spices on a metate. Cold mornings are its natural habitat, though nobody here waits for winter.

How to use it

Melt 23 g into 6–8 oz of hot, not boiling, water and whisk for a full thirty seconds. The ground spices settle faster than plain cacao does, so whisk again halfway down the cup.

If you are new to cayenne in a drink, start at two thirds of a serving. A small pinch of salt makes the cinnamon read sweeter without adding sugar, and it takes extremely well to oat milk.

How hot is it?

Warming rather than fiery. The cayenne sits behind the cinnamon and ginger and builds gently; most people find a full serving comfortable.

Is there sugar in it?

No. The sweetness people notice comes from the cinnamon, not from added sugar.

Can I make it iced?

Melt it in a small amount of hot water first so it emulsifies, then pour it over ice. Added straight to cold liquid it will not dissolve.

Does it contain caffeine?

Cacao contains theobromine and a small amount of naturally occurring caffeine, so it is not caffeine-free.

How do I store it?
