How to use it
Whisk half a teaspoon with warm — not boiling — water until smooth and glossy. Top with steamed milk, hot water, or cold milk poured over ice. That first paste stage is not optional; it is what stops the powder clumping.
Store the tin sealed, cool and away from light, and never return a wet spoon to it. Matcha oxidises quickly once opened, which is why a tin bought and drunk within a couple of months tastes noticeably better than one left open on a shelf.

Skip the boiling water. Matcha turns bitter above roughly 80 °C — boil the kettle, then let it stand for two or three minutes before you whisk. Almost every complaint about matcha tasting harsh traces back to water that was too hot.
