How to use it

  • Near-boiling water, around 205°F / 96°C. Black tea is one of the few types that genuinely wants it that hot.
  • Three minutes for the first steep. Yunnan is forgiving — it will not turn punishing if you forget it for a minute.
  • More leaf, less time, rather than less leaf and more time. That single adjustment improves most home brewing.
  • Reinfuse at least once. The second steep is lighter and often sweeter.
  • It takes milk without collapsing, though it does not need it. Try it plain first — the caramel note is what you would be covering.

A black tea from Yunnan province in China, often sold as Dianhong. They are known for golden-tipped leaf and a rounder, maltier, less tannic character than Assam or Ceylon.
How is it different from English Breakfast?
Softer and sweeter. English Breakfast is bracing and tannic; this is malty and smooth.
Can I add milk?
Yes, and it holds up. But the caramel note is the first thing milk hides, so try it plain at least once.
