The softest of the four pure origins, and the one people reach for when the goal is not insight or focus but simply coming back down. Earthy, unhurried, easy to drink slowly.

It carries the prayers of the Arhuaco of the Sierra Nevada de Santa Marta, who do not see themselves as separate from the Earth and who make ritual payments — pagamento — for what they receive from it. They grew cacao here more than six hundred years before colonization; the tradition faded when they lost their ancestral land and has returned since that territory was recognized as a living being under federal protection.

How to use it

Weigh or chop 23 g — about 25 discs — and melt it into 6–8 oz of hot, not boiling, water. Boiling water scorches cacao and turns it bitter.

Whisk it properly. Thirty seconds with a hand frother or a small whisk is the difference between a smooth, emulsified cup and a gritty one. There is no sugar in the bag, so add honey, a pinch of salt or chili if you want — it needs none of them.

Start below the full serving for your first few cups and work upward. Cacao is best met gradually. The 1 oz single-serve boxes travel well and need no scale.

Frequently asked questions

How is this different from cocoa powder?

Cocoa powder has most of the cacao butter pressed out of it. Ceremonial cacao is the whole bean, minimally processed, with the fat left in — which is why it is prepared as a drink rather than stirred into baking.

Can I drink cacao in the evening?

Many people do, though it is not caffeine-free — roughly 30 mg per cup. If caffeine keeps you awake, keep it to the first half of your day.

Does it contain caffeine?

A small amount — roughly 30 mg per cup. The main stimulant in cacao is theobromine, at about 212 mg per cup, which most people find steadier than coffee.

Is there any sugar in it?
