How to use it

Weigh or chop 23 g — about 25 discs — and melt it into 6–8 oz of hot, not boiling, water. Boiling water scorches cacao and turns it bitter.

Whisk it properly. Thirty seconds with a hand frother or a small whisk is the difference between a smooth, emulsified cup and a gritty one. There is no sugar in the bag, so add honey, a pinch of salt or chili if you want — it needs none of them.

How is this different from cocoa powder?

Cocoa powder has most of the cacao butter pressed out of it. Ceremonial cacao is the whole bean, minimally processed, with the fat left in — which is why it is prepared as a drink rather than stirred into baking.

How much do I use per cup?

One serving is 25 discs, about 23 g, in 6–8 oz of water. Most people settle somewhere between 20 and 42 g once they know their preference.

Does it contain caffeine?

A small amount — roughly 30 mg per cup. The main stimulant in cacao is theobromine, at about 212 mg per cup, which most people find steadier than coffee.

Is there any sugar in it?

None. The ingredient list is organic cacao beans and nothing else.

How do I store it?

Cool, dark, dry and sealed. Cacao picks up other smells quickly, so keep it away from strong spices.
